Honey Harissa Carrots + Everything Yogurt

A simple and perfectly balanced play on flavors, textures, and temperatures. Try this easy and healthy recipe, which features one of your favorite Trader Joe’s pantry staples — Everything but the Bagel Seasoning. Yes, chefs love TJ’s too.

Ingredients:

For the Carrots:

  • 5-7 peeled and cut on a bias

  • 1 tsp cumin

  • Salt and pepper

  • 2 tbsp olive oil

For the Harissa Honey:

  • 1 cup (200g) honey

  • 1 tbsp harissa

For the Everything Yogurt:

  • 1 cup (200g) plain yogurt

  • 2 tbsp + 1 tsp for garnish everything seeds

Procedure:

  • Preheat oven to 425°. Place the carrots on a sheet tray and season with salt, cumin, pepper, and oil. Toss to combine.

  • Mix the yogurt and 2 tbsp of the everything seasoning and then place in the fridge to set.

  • Cook the carrots for 15-20 minutes. As the carrots are cooking, combine the honey and harissa in a medium saucepan and cook until the honey begins to loosen (5-8 min).

  • About 12 minutes in, remove the carrots and pour the harissa honey on top. Place the tray back into the oven and continue to cook until they get caramelized and sticky, about 2-3 minutes more.

  • Once the carrots get nice and caramelized take them out. Get a sharing plate and place the everything yogurt in the middle and scatter carrots with some height.

  • Garnish with more everything seeds and enjoy!
